Tomato, Rose and Mint Soup

Tomatoes are source of Vit. C 
This sattvic soup is good in any season and for any taste. The recipe calls for fresh tomatoes. However, you can use as well frozen tomatoes from your garden.
Good for all doshas, but lightly increases Pitta.
Ingredients for 6 servings
8 fresh tomatoes
3-4 cups of water
1 tbsp of corn flour/starch
1 tbsp of tomato sauce
1 full nutmeg, grated
Salt, to taste
1 handful of fresh mint
½ tsp of rose water
 
Preparation
Blanch the tomatoes in boiling water
Remove the peels
Add the corn starch, mixed with 1-2 tbsp of water
Add the tomato sauce
Add the ground nutmeg
Remove from the stove
Add the mint leaves and rose water at the end.
