Avocado Cold Soup

Usually, ayurveda does not suggest to take cold drinks or soups, since it slows down the internal fire. However, being a Pitta dosha and being in front of the stove, this soup is a real blessing. All you need is a good blender and a refrigerator. Just a few ingredients and 15 minutes preparation. It leaves you more time to enjoy the summer.

Ingredients for 5 servings

2                chilled avocados
3 cups        cold water
1 1/2 tsp    coarse salt
1 1/2 cup    basil leaves
3                 trimmed large radishes
fresh ground pepper, to taste

Place all the ingredients in a blender, except the pepper, and pulse until chunky, about 4 times. Refrigerate until cold, about one hour. Stir well and garnish with julienned radish and basil leaves before serving. Sprinkle with fresh ground pepper.

For Kapha and Vata, you can add lemon juice or lemon compote, and a pinch of Cayenne.
