Flour- and Fat-Free Seed Crackers

Geneviève brought those delicious and nutritious crackers at our last puja. They are good for Vata and Kapha (use less sesame seeds), but can aggravate Pitta if eaten in excess.

 Mix together:
1/2 cup ground flax seeds
1/2 cup whole flax seeds
1/4 cup chia seeds
1/2 cup hemp seeds
1/2 cup sunflower seeds
1/2 cup sesame seeds
1/4 cup nutritional yeast
2 tbsp dried herbs (rosemary, thyme... to taste)

1.5 tsp onion salt
1/2 tsp salt (to taste - optional)
1/2 tsp pepper (to taste - optional)
2 tbsp honey or maple syrup (to taste - optional)

Add 2 cups water or warm infusion (rosemary, thyme, basil, green tea, etc.) - you can also add hydrosols to the water.

Let stand for about 15 minutes, allowing the flax and chia seeds to develop their mucilage.

Spread in a thin, even layer on two baking sheets lined with parchment paper (cover with another sheet of parchment paper and use a rolling pin or wide spatula to spread the mixture, then remove the top sheet of parchment paper. OR spread the mixture directly with a silicone spatula.)

Cut into squares with a knife or pastry scraper (before baking) OR leave as is and break the crackers into different shapes after baking.

Bake in a 350°F oven for about 20 minutes (depending on the thickness of the crackers, it may take more or less time). Will keep for several weeks in an airtight container.

Enjoy with your favorite dip or spread.

You can adapt the recipe by changing the proportions of the different seeds (except flax and chia seeds), and add crushed nuts.
