Salsa verde with green tomatos

The original salsa verde is made with tomatillos, however if you don't have them you can use green tomatos with lime juice. This green salsa goes well with tortillas, tacos, salads or roasted vegetables. It takes 5 minutes to make and is a great way to use those green tomatoes from the garden. Excellent sauce for kapha and vatta doshas. Blend the avocado at the end just for a few seconds to give the sauce a creamy consistency.



Ingredients
5 medium green tomatos or the original tomatillos.
2 jalapenos chillies.- no seeds-
1/2 onion
1/2 cup fresh cilantro
1 avocado
1/2 cup water or less
salt and pepper.

Procedure
Blend  all the ingredients together except the avocado get a good creamy consistency. Add at the end the avocado and pulse for 3 seconds. Adjust salt and pepper. Serve immediately. If you are not going to serve immediately  place the avocado seed in the center of the sauce to avoid any change of color. The sauce will keep in the fridge for 2 days.
