- 3 tablespoons almond butter
- 2 tablespoons water, to thin
- 2 teaspoons apple cider vinegar
- 2 tablespoons CocoCamino 85% black chocolate powder, heaped
- 5 dates, finely chopped
- 0.3 cups dried cranberries (a handful)
- 1 tablespoons cacao nibs
- 0.5 cups grated coconut, for rolling
Steps
Mix the base: In a bowl, combine 3 tablespoons almond butter with 2 tablespoons water, to thin, whisking to thin it out to a smooth, workable consistency. Add a little more water if needed.
Add the tang: Stir in 2 teaspoons apple cider vinegar.
Add chocolate: Mix in 2 tablespoons CocoCamino 85% black chocolate powder, heaped until fully incorporated and smooth.
Fold in the mix-ins: Fold in 5 dates, finely chopped, 0.3 cups dried cranberries (a handful), and 1 tablespoons cacao nibs until evenly distributed through the mixture.
Roll into balls: Scoop out small portions and roll into balls between your palms.
Coat in coconut: Roll each ball in 0.5 cups grated coconut, for rolling until fully coated. Chill before serving.
Notes
Optional additions to taste: a drizzle of maple syrup for extra sweetness, a splash of dark espresso balsamic vinegar (Aurelius, Glebe) for depth, or a little orange juice for brightness/thinning instead of water. Quantities for water, cranberries, and coconut are estimates — adjust to reach the texture and coating you like.
