If you have been tempted with a decadent dessert or a heavy meal and want to come back to your natural lightness, this soup is for you. Do a big pot and eat only this for a day or two. Add more ginger if you want to move some stagnation from your system. Lovely soup as well in the winter season.
The carrot in this recipe contains b-carotene, which will help your vision. Carrots are also rich in vitamin A. The celery in this recipe contains an abundance of the vitamins A, C, and K. Celery is a great source of calcium. Turmeric has many benefits - it helps to prevent cancer, is a natural liver detoxifier, a natural antiseptic and helps treat inflammatory skin conditions.
Ingredients:
4-6 cups of filtered/clean water
1/4 cup shredded carrot
1/4 cup chopped celery (coriander)
1/2 cup chopped dark greens
6-8 black peppercorns
1-2 thin slices of fresh ginger
1 tsp cumin seeds
1/4 tsp turmeric
1/2 tsp rock salt (optional)
Directions:
Take a pot and mix all the ingredients in it.
Bring the mixture to a boil.
Simmer for about 1 to 1-1/2 hours.
Mash vegetables against sides of pot with back of ladle.
Strain and serve it hot.
