Applesauce Delight

This recipe from Gabrielle makes a delicious breakfast, dessert or snack.
Apples have neurological, cardiovascular, lung, colon, systemic, and prostate benefits. They are amazing for the whole body wellness. They also prevent cancer, help with heart disease, help and control weight loss. They are high in antioxidant compounds. Apples are rich in calcium, potassium, vitamins A and C, folate, phosphorus and iron.

Ingredients:

10 apples
½ tsp cardamom
½ stick of cardamom
1-2 tsp jaggery or other sweetener
½ cup mixed nuts
¼ cup grated coconut
2-3 tsp maple syrup
Lime or lemon juice

Preparation:

If you use organic apples, you can cook them with the skin. If not, peel and core the apples.

Put in a casserole with the spices and sweetener, and cook with ¼ cup of water until the apples are soft. Remove the cinnamon stick and put in a blender with the juice of ½ lime.

Meanwhile, coarsely chop the nuts and roast them in a pan with vegetable or coconut oil, and add the grated coconut. Once the nut mixture is roasted, add the maple syrup and cook barely one minute, until the mixture is well blended and sugary.

Serve in individual cups, placing a thin layer of the nut and coconut mixture in the bottom. Once the applesauce is cool, spoon a layer on top of the nut mixture. Garnish with your choice of garnishing and chill. You can also serve the applesauce warm.
