Sweet Potato and Apple Brownies

I have being postponing to post this recipe. However, every time I do it at home, I have an intense desire to share this succulent and healthy recipe. These brownies are originally from Chef Jacques La Merde from IQ FOOD Co. in Toronto. This recipe is from his famous dessert menu.
I have added some spices and experimented with a different fruits, like pieces of apple or pear. Either way, this dessert can make kids eat their protein and still look for more.


Ingredients

1 large sweet potato
1 cup natural almond butter
1/4 cup of maple syrup or raw agave
1 cup of unsweetened applesauce
1 tsp of grated ginger
3 tsp of chia seeds
½ cup of cocoa powder
½ cup of chocolate chips or small pieces of fresh green apple
2 tsp of baking soda
3/4 tsp of sea salt
½ tsp of cardamom
½ tsp of chilli or smoked paprika
½ tsp of cinnamon
½ tsp of powdered ginger

Preparation
1.- preheat the oven to 350F
2.- Roast the potatoes with ghee, maple syrup, cinnamon and cardamon until soft (45 minutes). Let it cool and peel the skin, mash to make a soft paste.
3.-Reduce the heat to 325F. Line a rimmed 9X9 inch baking dish with parchment paper.
4.- In a large bowl, cream together the mashed potatoes, almond butter, sweetener, grated ginger and applesauce to make a soft paste.
5.- Pour all the dry ingredients on top. Combine well with a spatula, but don't overmix.
6.- Bake for 26 minutes, then remove from the oven and let it cool. Gently remove from the dish, wrap tightly in plastic wrap and freeze for an hour or so. Cut the brownies with a hot knife. Serve chilled or at room temperature.
