"Adobo" is a popular all-purpose seasoning that has a garlic flavor. It is commonly used in Cuba, the Dominican Republic and Puerto Rico. If you would like it to be a bit hotter, add an extra tablespoon or two of ground chili.
Ingredients:
2 tbsp black peppercorns
2 tbsp cumin seeds
2 tbsp dried oregano
2 tbsp salt
2 tbsp garlic powder ( avoid if you are a meditator)
1/2 tsp chili powder
Procedure:
In a small, dry heavy skillet over medium heat, roast the peppercorns and cumin seeds separately until the seeds become fragrant. Stir frequently so they don't burn. Transfer to a plate to cool. Add the seeds and oregano in a spice mill and process until the consistency becomes that of a fine powder. Add the rest of the ingredients and store it in an airtight container. The blend will keep for 6 months.
